As a professional sushi boss, it is easy to tell which potential employees fits this position, unless the boss just wants the "free labourers".
If you think he or she is not good enough, tell them directly and immediately.
If you need more time to convince yourself, you can ask your potential employess or students to stay longer, may be one h or two hrs. If you would like to employ them, you do not have to pay them, and just ask them starting the work today or tomorrow. If you think he or she still cannot meet your criteria after two hrs training, I suggest, at least you have to Pay them "something", like $10 dollars for trafic expenses and several bars of sushi and a thank-you-sorry greetings.
