Absolutely the BEST chocolate cheesecake you can ever imagine! Granny had this recipe for over 60 years. It’s her signature dessert and now it’s also mine ☺
Crumb crust:
1 cup chocolate flavoured biscuit crumbs
¼ cup chopped walnuts
45g butter, melted
Filling:
1 tbsp gelatine
½ cup cold water
½ cup boiling water
250g Philadelphia cream cheese, softened at room temperature
1 cup sugar
1 ½ cup tsp vanilla essence
½ tsp peppermint essence
110g cooking chocolate, melted
1 cup cream, whipped
Preheat the oven to 180 degrees.
Combine biscuit crumbs, walnuts and melted butter, press on to the bottom of a buttered 8 inch pan. Bake for 10 minutes.
Soak gelatine in the cold water, add boiling water and stir until gelatine dissolves (the order is very important!). Beat Philadelphia cream cheese until smooth, gradually add sugar, vanilla and peppermint essence and melted chocolate, beating constantly.
Gradually blend in the gelatine mixture. Fold the whipped cream through the cream cheese mixture. Pour over prepared crumb crust. Chill until firm. Decorate with whipped cream and walnuts (optional).

A fun and easy way to cook, it can be cooked in the middle of the table with everyone cooking their own balls and putting whatever ingredients they want in it. If you’re not a fan of octopus, you can use finely chopped and cooked chicken.
1 small octopus leg, cleaned, skinned and diced
Cabbage – diced finely
1 cup of flour

Tonkatsu 豚カツ 日式猪排饭
2-3 pieces of pork loin cutlets
Japanese breadcrumbs (Also available from Chinese grocers)
1-2 eggs
Plain flour
Salt, pepper, Chinese cooking wine (Optional)
Oil for deep frying
Tonkatsu sauce
Japanese mayo
2-3 tbsp vegetable oil
Preparation
• Remove the shell of boiled eggs & keep aside. Heat oil in a wok ( non stick preferable) and add
• Cinnamon,cloves,elachi and onion- fry till golden brown and add ginger garlic paste fry the paste for 2 minutes along with onions.
• Add all the spices salt, turmeric, coriander & chili powder, garam masala and fry for a minute and add tomato peices. Fry till it starts leaving oil.
• Add a cup of water and cook till it dry’s.
• Now add the boiled eggs.
• Add 1 cup of water and bring to boil and reduce the flame.
• Simmer for 10 minutes.
• Garnish egg curry with coriander leaves and serve hot with paratha, roti or rice.

Having guests over after work? Time is the most important factor! There is only so much you can do in short time. Unless you make your dessert the night before, forget about the complicated desserts. You can also use slow cooker to cook certain dishes during the day. It will certainly save you a lot of time! Try this three course meal that can be prepared in two hours.
7:30am
Marinade the chicken for Karaage Chicken just before leaving for work
9am-5pm
…… wishing I win the lottery, so that I don’t need to work….
5:30pm
Arrived home from work, take the puff pastry out from the freezer
5:40pm
Cook the Chicken & Bamboo Shoot Curry, put it in the freezer to cool.
6:00pm
Dice and marinade the lamb for Oven Cooked Uyghur Lamb Skewers. Make the skewers, place them on a baking rack, leave on the bench to develop the flavours. It only takes about 15 minutes to cook in the oven, so don’t panic!
6:05pm
My lovely husband gets home from work. Give him a kiss, then IMMEDIATELY send him to clean the table, do the table setting and pick a wine
Make the salad
6:20pm
Turn the oven on to preheat
The puff pastry should be nice and soft, cut and line the pie tins with pastry, put in the freezer to cool for 5 minutes
6:40pm
Take the chicken curry & pie tins out from the freezer. Finish making the pie. Put it in the fridge to cool.
6:50pm
Cook the Oven Cooked Uyghur Lamb Skewers. Turn the rice cooker on.
7:10pm
When Skewers are ready, take it out, put the Chicken Pie in the oven. Set a timer because you will FORGET when you are by the table and chatting with your guests.
Dinner start! Serve entree skewers.
